Don Santi Industria Láctea S.A. is a small Uruguayan artisan cheesemaker founded in the year 2000 on the historic Sonderegger family site in Colonia Valdense, Department of Colonia, where Jacob Santiago Sonderegger from St. Gallen Switzerland installed one of the first cheese dairies of the Swiss colony region in 1863. The current generation of the family rebuilt the small cheese plant in 2000 as a tribute to their founding ancestor and named the company Don Santi after him. The portfolio centers on traditional Uruguayan cheese formats with European roots: Queso Colonia (salted and salt-free), Tybo, Ricotta, Magros (reduced-fat with and without salt), Dambo, Cuartirolo, Mozzarella, and Provolone. Don Santi distributes to Uruguayan retail chains, gourmet specialty stores and hospitality buyers, with selective regional MERCOSUR exports to Argentina, Brazil and Paraguay.
