Conaprole Mozzarella is a stretched-curd cheese produced by the largest dairy cooperative in Uruguay, designed for industrial food service and pizza production. The cheese is made from standardized pasteurized milk with starter lactic acid bacteria, calcium chloride, and chymosin for coagulation. After cutting, stirring, heating, and whey draining, the curd is stretched with hot salted water, molded, salted, and surface-dried before vacuum packaging. Appearance: Uniform yellowish-white color, rindless. Consistency: Semi-hard to semi-soft, elastic. Texture: Fibrous, elastic, and close. Flavor: Lactic, little developed. Aroma: Lactic, slightly perceptible. This 5kg block format is designed for high-volume operations including pizzerias, industrial kitchens, and food manufacturers requiring consistent melt, stretch, and browning performance across large batches.
