The bar is molded into easy-to-break segments stamped with the Aguila eagle, simplifying portioning for kilo-scale recipes and reducing knife work on the bench. Cocoa solids sit in the semi-sweet range, giving the chocolate the clean cocoa character and controlled sweetness expected for alfajor coatings, brownie bases, bizcochuelo inclusions, ganache for tortas, and chocolate glazes. It melts cleanly over bain-marie or microwave, tempers within standard cocoa-butter curves, and holds set once worked on marble.
